Yellow-tail newspaper fish
Nothing beats good quality fish cooked to perfection on a braai, and this tomato, onion and pepper infused fish in news paper braai is an all time classic.
Ingredients:
6 Sheets newspaper
1.5 – 2 kg Whole fresh linefish
1 Red pepper cut into strips
30 ml Olive oil
1 Packet spicy tomato and onion packet soup
60 ml Fresh mixed herbs (parsley, thyme, fennel) chopped or 20 ml mixed dried herbs
1 Bunch spring onions chopped
3 ml Ground fennel seeds
50 ml Lemon juice

Method:
Open the newspaper sheets and place the fish in the centre then fry the peppers in half the oil.
Brush the fish, inside and out, with the remaining oil, then sprinkle with the contents of the pack of soup.
Place ½ the peppers, herbs, spring onions, ground fennel seeds and lemon juice into the cavity of the fish. Sprinkle the other ½ on top and underneath the fish.
Wrap the fish up in the newspaper and secure with string then wet the paper very well under running water and braai over medium coals for 20-25 minutes per side.
